Pok choi (also known as bok choy, chinese cabbage, or pak choy) is a cool season vegetable that has stalks surrounded by smooth, tender leaves. The flavor is a cross between cabbage and chard. The plant grows upright with outward flaring leaves and their white or green stalks look similar to non-stringy celery. This vegetable is planted in early spring for an early summer harvest and can be planted again in the late summer for an early to mid fall harvest. You can also succession plant every few weeks for a longer harvest period.
Planting/Harvesting Notes
- Transplant 12-18 inches apart
- Do not bury your transplant any deeper than they were inside their container
- Crop is mature in 48-85 days
- Plant in full sun and well draining soil
- Harvest baby leaves every 5 weeks or so for repeated harvest of baby leaves. Harvest full size heads in 8-10 weeks.
- If you leave the root with a few outside leaves in place, a second head should be able to grow from the center.
